According to the Holy Bible, manna comes from Heaven and is a gift from God. The farmers of the Madonie Mountains know this well. From July to September, they patiently extract the sap from the ash trees in the mountains between Castelbuono and Pollina, overlooking the sea near Cefalù. They do this by making precise incisions ("ntacche") in the tree bark. The secreted liquid quickly solidifies under the sun, forming small white stalactites (called "cannoli") rich in extraordinary properties: this is manna.
