Our Parmigiano Reggiano is made by the SAN PIETRO dairy, code no.2659.

The San Pietro dairy is located in the village of Benedello near Modena in Emilia Romagna. Benedello is located in the Appenine mountain range at an altitude of 700m. It is a tiny cooperative of 5 farms. They milk around 100 Fresian cows in total for a daily production of 6 wheels (sometimes 7) of Parmigiano, around 2300 wheels a year. The Cravero family of Bra in Piemonte (our supplier) has been involved in the selection and ageing of the cheeses produced in Benedello since the mid 70's. Benedello is a kind of "promised land", where the total absence of pollution, small size of the dairies and the fantastic particular flora of the mountain pastures favour the production of very high quality milk and excellent "soft and sweet" cheese.

The crucial point about the San Pietro excellence is that the 5 farmers feed their cows EXCLUSIVELY with the local grass that grows just around their farms. Nothing is bought in. No chemicals are used. We describe here a "production from terroir" that in the Parmigiano Reggiano world has become rare and unusual.
