During the Middle Ages, bread was the most important ingredient of the main courses in Italy. From here on you could see the bread placed in the middle of the plate and not just on the side of it. The chefs of noble courts or taverns had the idea to emphasise the flavours of meat, legumes and vegetables by serving them on the top of “ crostini”: crispy slices of bread. Even nowadays, you can find crostini in the menu of restaurants, brasseries and wine bars.
