Aged in a natural cellar for 3 to 5 months gives our cheese a natural bloomy, revealing a surprisingly supple texture.
This cheese owes its interesting shape to Dutch moulds.

In Aveyron, 20 producers located on the Larzac plateau and the Mont du Lévézou have joined forces, sharing their passion for sheep's milk in this rustic region. To remain on their land, these farmers combined their efforts to produce their first cheese in a former dairy. These shepherds moved into a new, European-standard cheese factory in 2010 and there processed over two million liters of sheep's milk, producing 430 tons of cheese.

Proud of their natural limestone cellar dating back to 1866, the cheeses mature among the stones of the fortified towns (Bastides) to reveal the authentic character of the sheep's milk.
