The story of Est! Est!! Est!!! di Montefiascone is a 12th-century legend about a German bishop, Johannes Defuk, traveling to Rome. The Bishop Johannes sent his servant, Martino, ahead of him to scout for the best wine, marking doors of taverns he passed with "Est" (It is! in Latin) where good wine was available. Upon reaching Montefiascone, a town near Lake Bolsena, the wine was so exceptional that the servant wrote Est! Est!! Est!!! on the tavern door. The Bishop was so pleased with the wine that he cancelled his trip to Rome, stayed in Montefiascone, and reportedly died from overindulging in the local wine a few years later.Enjoy!
