This Comté earns it's AOP status being produced only from the Montbéliardes cows from Jura, Doubs and Ain along the French Swiss border. The milk is transformed into curds in traditional copper boilers. The cheese is then poured into pressing moulds and carefully cared for by the 'chefs' of the refining cellars. As the cheese firms it is rubbed with salt, then with a brine called morge, and turned.

This Comté is Extra-vieux, aged for a minimum of 18 months. This gives us the firm yet smooth texture, and that fruity and spicy flavour.

Some history from our supplier: 'From the Middle Ages, the number of litres of milk needed to make a Comté wheel (more than 400 litres) encouraged farmers to organize their villages into fruit plantations, which correspond to the cooperatives that we know currently. In recent decades, Comté manufacturing has modernized in order to improve the quality of the cheese. Know-how and ancestral practices remain the guarantor of traditional character and authenticity of the product.'
