Fresh Italian olives - what to do with them? Wash the olives. Place in a bowl and cover with water. Put a weight on top to keep all the olives under the water. Change the water daily for 20 days.

After 20 days, put the olives in brine. For the first month keep the olives in a brine solution of 1 litre of water and 100g of salt.

For the second month, change the brine, this time with 120g of salt for 1 litre of water. At this stage you can also add other flavourings.

For the third month, make a brine solution with just 60g of salt for 1 litre of water – this way the olives will not be too salty.
